One of the most common questions we hear from new beef share buyers is: "What exactly will I get?" Great question. A Roaring Hills Ranch Brangus beef share delivers a full spectrum of cuts from across the animal — from everyday weeknight ground beef to special-occasion steaks. Here's a breakdown of what to expect and how to cook each cut.
Ground Beef
Ground beef typically makes up the largest portion of your share by weight — usually 30–40% of the finished cuts. It comes from trim across the whole animal and is ideal for burgers, tacos, meat sauce, chili, meatballs, and meatloaf. Our ground beef is rich in flavor from the Brangus genetics and grass-forward diet.
Steaks
Expect a variety of steaks depending on your share size, including:
- Ribeye — rich marbling, best cooked hot and fast on a cast iron or grill
- New York Strip / Sirloin — leaner than ribeye, great for weeknight grilling
- Chuck Steaks — flavorful and budget-friendly, great marinated and grilled or braised
- Tenderloin / Filet (whole shares) — the most tender cut on the animal, minimal seasoning needed
Roasts
Roasts are the workhorses of a beef share. Slow-cook them in a Dutch oven or slow cooker for fork-tender results:
- Chuck Roast — the classic pot roast cut; braises beautifully
- Rump Roast — leaner, great sliced thin for sandwiches after a long, slow cook
- Arm Roast — rich, collagen-heavy, ideal for slow cooker meals
Brisket
Brisket is the crown jewel of Texas BBQ — and with Brangus beef, you'll notice incredible depth of flavor. Smoke it low and slow (225°F) for 10–16 hours for a result that rivals any BBQ joint. Alternatively, braise it in the oven for a rich, shreddable weeknight dinner.
Short Ribs
Short ribs are increasingly popular and for good reason. Braise them in red wine and beef stock for 3–4 hours and you'll have a restaurant-quality dish at a fraction of the cost. They're also excellent on the smoker.
Stew Meat
Pre-cut chunks perfect for beef stew, beef and vegetable soup, or Instant Pot dishes. A great weeknight protein with minimal prep.
Organ Meats (Optional)
If requested, we can include liver, heart, and tongue. These are nutritional powerhouses and deeply flavorful in the right preparation. Let us know at order time if you'd like them included.
