Frequently Asked Questions

What's Included in Each Share?

Each share is cut to your specifications and vacuum-sealed for freshness. Here's what you can expect by share size:

  • Quarter Share – Approximately 100–130 lbs of finished beef (hanging weight varies). Includes your choice of steaks (cut to 1 inch), roasts, short ribs, brisket, and 2 lb ground beef packs.
  • Half Share – Approximately 200–250 lbs of finished beef with the same customizable cuts.
  • Whole Share – Approximately 400–500 lbs of finished beef with the full range of cuts.

Organs (heart, liver, tongue, etc.) are not included by default but may be requested at the time of your order.

How Do Deposits Work?

A non-refundable deposit is required to reserve your share. The deposit secures your animal and processing slot. The remaining balance is due before or at the time of pickup or delivery. We will contact you with the final weight and balance owed once processing is complete.

Can I Customize My Cuts?

Yes! We offer cuts to order in whole beef orders. Standard options include:

  • Steaks cut to 1-inch thickness
  • Ground beef in 2 lb packs
  • Roasts, brisket, short ribs, and more

Let us know your preferences when you place your order and we'll work with our processor to accommodate your requests.

Where Do I Pick Up My Order?

Pickup is available at Roaring Hills Ranch in Williston, FL. We will coordinate a pickup date and time with you once your beef has been processed and is ready.

Do You Offer Delivery?

Yes! We offer delivery within a 50-mile radius of Williston, FL. Delivery availability and any associated fees will be confirmed when your order is ready. Contact us to confirm your address is within our delivery range.

How Long Does Processing Take?

After your animal is harvested, processing typically takes 2–4 weeks, which includes dry aging and cut-and-wrap time at the processor. We will keep you updated and notify you as soon as your order is ready for pickup or delivery.

How Should I Store My Beef?

All of your beef arrives vacuum-sealed and frozen. To keep it at its best:

  • Store in a deep freezer at 0°F or below
  • Vacuum-sealed beef can last 12–24 months in the freezer without loss of quality
  • Thaw in the refrigerator overnight — avoid thawing at room temperature
  • Once thawed, use within 3–5 days

A chest freezer or upright deep freezer works great for a half or whole share. A quarter share typically fits in a standard kitchen freezer.
